Let’s set the record straight on those potatoes- why are they getting such a bad rap?
Potatoes are a complex carb aka “good carb.” YES even people at risk or diagnosed with diabetes can and should have potatoes as a part of their diet!
They provide a great source of fiber to prevent our blood sugars from spiking and keeping us fuller for longer. This is very beneficial, especially for those with diabetes.
There is no added sugar here either!
Did you know potatoes have more Vitamin C than most fruits?! Vitamin C is an important antioxidant that reverses cell damage, helps our bodies to heal wounds and keeps our skin healthy.
Did you know they are labeled as a “heart healthy” food by the American Heart Association?!
Potatoes are one of the cheapest ways to get an exceptional dose of potassium. Potassium is essential in helping to maintain our blood pressure within the normal range as well as proper muscle function.
Finally, potatoes are so versatile, you can have them baked, grilled, sautéed, mashed, whole, cubed, or stuffed and they can be part of ANY meal!
